{"title":"Clydeside","description":"\u003cp\u003eThe Clydeside Distillery brought single malt whisky back to the heart of Glasgow. It opened in 2017 inside the old Pump House at Queen's Dock, a Victorian brick building that once powered the hydraulic swing bridge on the River Clyde, at a time when the city hadn't had a working city-center malt distillery in over a hundred years. The man behind it is Tim Morrison, whose family owned Morrison Bowmore, the company that ran Bowmore, Auchentoshan, and Glen Garioch, and who went on to found the independent bottler A.D. Rattray. The distillery is deliberately old-school: 100% Scottish barley, water from Loch Katrine, long fermentation, and two copper pot stills that face out through glass onto the river, so visitors can watch the spirit being made while ships pass behind it. The Clydeside style is a light, fruity Lowland malt that takes cask influence well. Stobcross, the flagship, is matured in first-fill bourbon and Oloroso sherry casks and named for the old dockside district the distillery sits in. Napier is the sherry-forward bottling, matured more than six years in Oloroso casks and named for Robert Napier, the engineer known as the father of Clyde shipbuilding, whose yard sat across the water.
