After a 1962 excise raid, Count Louis de Lauriston negotiated a settlement that required a legal cellar to store and market the farmers' Calvados, and became its first president. He later led the campaign that won Calvados Domfrontais its own AOC in 1997, and since 1992 the cellars have partnered with Christian Drouin, who manages production and sales under the Lauriston name.\u003c\/p\u003e\u003cp\u003eDomfrontais is the smallest Calvados appellation, about 1% of production, and must contain at least 30% perry pears grown on schist and granite soils. Fruit is grated and pressed in jute bags, the cider ferments slowly in wooden casks over winter, and the dry cider is distilled in a single pass through a column still.
