Winemaker Lee Miyamura, a Paso Robles veteran since 1990, took over the cellar in 2021, while viticulturist Patrick Silveira, whose family has farmed the area since 1864, has guided the vineyards from the start. Farming and winemaking are certified sustainable.\u003c\/p\u003e\u003cp\u003eMost of the fruit comes from the Cagliero and Estrella vineyards in the San Miguel District, the northernmost sub-appellation of Paso Robles, where deep sandy alluvial soils and diurnal swings of up to 50 degrees build color and freshness. About 10% is drawn from Steffano II Vineyard in the El Pomar District on clay, granite and calcareous soils. Aging in neutral oak keeps the focus on terroir rather than barrel. The Iron + Sand Paso Robles Cabernet Sauvignon is deep purple with dark red fruit, blueberry, black cherry and cassis, a plush mid-palate and the bright acidity that Paso's cold nights preserve.\u003c\/p\u003e\u003cp\u003eIt is a focused, honest expression of Paso Cabernet at a price that invites a second bottle.
