Passover approval requires that the spirit be nothing but agave and water, fermented naturally or with certified yeast, with no grain-derived additives, flavorings, glycerin, or sweeteners at any stage, and the certifying rabbis inspect the distillery to confirm it. For observant drinkers, that makes Prefiero one of the few tequilas that can be poured at a Seder. For everyone else, it's a guarantee of an additive-free tequila, which is rarer than it should be. The range covers the classic three: an unaged Blanco with cooked agave, citrus, and pepper that's made for margaritas; a Reposado rested in oak for vanilla and light caramel; and an Añejo aged more than a year for caramel, baking spice, and a rounder, sipping-weight texture. All are bottled at 40% ABV.
