{"title":"The Balvenie","description":"\u003cp dir=\"ltr\"\u003eThe Balvenie has been distilling in Dufftown, Speyside since 1892, and it's one of the last distilleries in Scotland to still do everything under one roof: it grows some of its own barley, runs its own traditional floor maltings — steeping, turning, and kilning over anthracite with a judged amount of peat — and keeps its own coppersmiths and cooperage on site. Coppersmith Dennis McBain has been maintaining its stills since 1966; head cooper Ian McDonald started his apprenticeship in 1969. Nine squat, short-necked stills produce the honeyed new make that defines the house. But the distillery's real legacy belongs to Malt Master David C. Stewart MBE, who joined William Grant \u0026amp; Sons as a stocks clerk in 1962 and spent six decades there. In the late 1970s he began moving whisky from one cask type into another and tasting it monthly — inventing what the entire industry now calls cask finishing. That work produced The Balvenie Classic in 1983 and, in 1993, DoubleWood 12: twelve years in American oak ex-bourbon, nine months in Spanish Oloroso, then married in oak tuns. It remains the bottle that put Balvenie on the map.
