It is made at NOM 1414, Feliciano Vivanco y Asociados in Arandas, Los Altos de Jalisco, with master distiller Sergio Cruz, from mature estate-grown Blue Weber agave raised at about 6,800 feet in red, iron-rich volcanic soil. Piñas are cooked 54 hours in brick ovens and passed once through a roller mill. The blend is 80% wild-yeast fermentation and 20% Champagne-yeast fermentation in open-air tanks with 800-foot well water, double distilled in small copper pot stills from Santa Clara del Cobre, and bottled unfiltered by hand, certified additive-free, at 40% ABV (80 proof) in a 750ml bottle made of recycled glass with an agave-fiber label.
