The agave is 100% certified organic Blue Weber from the family's own volcanic-soil estate, slow-cooked in stone ovens, roller-milled, fermented in open-air stainless steel tanks with wild yeast and deep well water, and double distilled in copper pot stills. It rests four months in glass before bottling with no additives and no chill filtration. The producer describes an earthy, herbal nose with orange rind, jalapeño and honey, a palate of black pepper, minerality and light smoke, and a medium-to-long finish of citrus, herbal freshness and raw agave. In Taste Tequila's 2024 high-proof panel, tasters were split by its funky malolactic nose, with aromas of mushroom, parmesan, grass, clay and honeydew.
