The Yuki Otoko, or Snow Yeti, is said to haunt the local mountains and guide lost travelers home, and the brewery honors the legend literally: a portion of proceeds funds local mountain search-and-rescue. The brewery sits in one of the snowiest regions in Japan, and while Niigata is famous for tanrei-karakuchi (light, crisp, dry) sake, Aoki Shuzo aims for tanrei-umakuchi — crisp and dry but with real rice umami preserved. This honjozo is brewed from Gohyakumangoku and Koshi Ibuki rice polished to 65%, with soft well water from Mt. Makihata and a small traditional addition of distilled alcohol that sharpens the finish. SMV +8 (genuinely dry), 15.5% ABV.
