The Reserve Cabernet Sauvignon is the winery's benchmark red, and the 2019 release is 100% Cabernet Sauvignon, clones 191 and 337, drawn from three loam-soil sites: the Bianchi estate vineyard in Geneseo, Plummer Vineyard and Red Tail Vineyard in the Estrella District, all in the warm, sun-drenched eastern half of Paso Robles. Fermented with a Bordeaux yeast strain, the wine was aged 23 months in brand-new French oak barrels from cooper François Frères at medium-plus toast, bottled at 15.1% ABV, with just 468 cases produced. The winery's notes describe a deep ruby wine of violets, wild blackberry, blueberry, tobacco, leather and black olive, with chalky minerality, balsamic reduction and toast on the nose, and a dry palate of dark chocolate, blackberry jam, green and white pepper, tobacco, chalk and iron. Pair it with pot roast, pork tenderloin with roasted root vegetables, mushroom ravioli or a peppercorn cheese like Beecher's Marco Polo.
