Each label comes from a different landscape within the sotol denomination of origin. Sotol de Desierto is distilled by sotolero Gerardo Ruelas Hernández near Ciudad Aldama in the Chihuahuan Desert from a wild-harvested ensamble of three Dasylirion species, cedrosanum, texanum and berlandieri, plants that grow twelve to fifteen years before harvest. The piñas are cooked in stone-lined earth ovens, crushed by axe, fermented in pine wood tubs and double distilled in copper stills, then bottled at 45% ABV (90 proof). The producer describes a highly aromatic, floral nose with cooked-agave sweetness, a mid-palate that dries into minerality, earth, wood and dark chocolate with green vegetal notes, and a lingering sweet cacao finish.
