Domfrontais is the smallest Calvados appellation, about 1% of production, built on a minimum of 30% perry pears grown on schist and granite soils; the fruit is grated and pressed in jute bags, fermented slowly in wooden casks through the winter and distilled in a single pass through a column still. Ageing takes place in old, mostly small oak casks that leave the fruit intact, and the blend is bottled at 42% ABV. The producer describes a deep golden colour with copper and amber tints, a complex nose of jammy fruit, spice and exotic wood, and a dry, lively palate with fruit in the foreground and a spicy, powerful finish, recommending it for the end of a meal.
