This Fine carries the AOC Calvados designation and is made in the Domfront style: apples and a large proportion of perry pears are grated, pressed in jute bags, fermented slowly in wooden casks through the winter, then distilled in a single pass through a column still. The young spirit is aged for over two years in old oak casks, chosen so the wood never masks the fruit, and bottled at 40% ABV. The producer describes a very fruity nose and palate of apples and pears and recommends it on the rocks, in cocktails and long drinks, or in the kitchen for cooking and granités.
