It comes from the Chais du Verger Normand in Domfront, the cellars Count Louis de Lauriston founded in 1962 to give local farm distillers a legal outlet, now operated in partnership with Christian Drouin, whose stock of vintage casks reaches back to the 1950s. Domfrontais Calvados must contain at least 30% perry pears, grown on schist and granite soils around Domfront; the pears and cider apples are grated, pressed in jute bags, fermented slowly in wooden casks over winter and distilled in a single pass through a column still. Three decades in old, mostly small oak casks concentrate the spirit while keeping the fruit at the centre, and it is bottled at 42% ABV. The producer describes an amber colour, a supple nose of pastry, plum and apple jam, and a long-lasting palate that is both round and fresh, finishing on baked apple.
