The distillery sits in Houlette, a village about 10 km east of Cognac, where Jean-François Rault, now joined by his sons, went organic in 1998 after decades of distilling for larger houses. The family owns 30 hectares of Ugni Blanc in the Fins Bois cru, a few kilometres from Grande Champagne, supplemented by a network of organic partner growers, and the Cognacs are certified by Ecocert and the USDA. Wines are distilled on their lees in traditional Charentais copper pot stills using the house's signature fatty distillation, which builds esters and fruit, and this blend of young eaux-de-vie from several crus ages roughly three to four years in old French oak before bottling at 40% ABV, non-chill filtered with natural colour. The producer describes ripe apricot and tropical fruit on the nose and stone fruit, white tea and fresh flowers on a smooth palate.
