Founded by Brian Trevizo Yee and Ana Victoria Ruiz, Don Vicente uses estate-grown Blue Weber agave from roughly 6,500 feet, harvested at six to seven years for maximum sugar. The agave is cooked in Camarena's stone ovens with steam jets above and below, milled on the mechanical stone tahona Felipestein, fermented with a proprietary yeast in stainless steel tanks with deep well water, and double distilled in traditional copper pot stills. The reposado rests an average of six months in ex-bourbon barrels, is oxygenated in steel tanks, and is bottled at 40% ABV (80 proof) in a 750ml bottle. The producer's notes describe green, vegetal and floral aromas with a peppery, herbal character, then tropical fruit, dessert-like caramel and warm baking spice, all over the mineral backbone that defines El Pandillo spirits.
