Blue Weber agave harvested at six to eight years is slow-cooked 48 to 50 hours in 20-ton masonry ovens, roller-milled, fermented without fibers for up to 200 hours in open-air stainless steel cisterns with Baroque music playing, and double distilled in copper pot stills with deep well water. Each small batch is individually numbered with a handwritten label, with no additives, bottled at 40% ABV (80 proof). The producer describes fresh agave with lime and orange zest, light earth and soft minerality, then mid-palate pepper, herbal grassiness and spearmint with a crisp mineral edge and medium finish.
