Founded in 2003 and based at the historic Carbone winery in Coombsville, Favia makes tiny quantities of site-specific wines, and the Oakville Cabernet Sauvignon is drawn from benchland and hillside parcels in the Oakville AVA, the mid-valley district whose gravelly alluvial fans and warm afternoons produce Napa's most complete Cabernet. The wine is predominantly Cabernet Sauvignon, native-yeast fermented and aged around 20 months in French oak, roughly two-thirds new, and bottled unfined around 14.5% ABV. Expect a wine of deep cassis, blackberry and black cherry with graphite, violets, crushed rock, cocoa and sweet tobacco, dense yet precise, with fine, polished tannins and a saline mineral lift through a long finish; recent Favia Cabernets have drawn 95-plus scores from Jeb Dunnuck and Vinous.
