Haiku is the Folsom brewery's answer to a chilled, aromatic premium sake: brewed with no added distilled alcohol from rice polished to 70 percent, a ratio the brewery deliberately raised from 60 to let more of the rice character through and reduce waste, and bottled at 14.6% ABV in a 750ml bottle with a purple cherry-blossom label. The brewery describes ripe pear, pineapple, apple and muscat grape on the nose, a palate that opens with pineapple and moves through apple, pear and mango with bold acidity and a hazelnut-like umami, and a dry, clean finish with lingering sweetness.
