The brand was started by Frank Mendez and his family, who partnered with master distiller Leopoldo Solís Tinoco at Feliciano Vivanco y Asociados, NOM 1414, where the Vivanco family has grown blue Weber agave on the red soil of the Jalisco Highlands for five generations. Solís Tinoco thought enough of the finished tequila to put his signature on the label. Mature single-estate agave is slow-roasted in stone and brick ovens for up to 36 hours, crushed on a roller mill, fermented in stainless steel with champagne yeast and the wild yeast carried in from the fields, with classical music played to the tanks, and double distilled in copper pot stills. Bottled at 40% ABV, 80 proof, it is confirmed additive-free, and tasters describe it as citrusy, floral and lightly peppery with a clean cooked-agave core and a crisp finish.
