Pony Express is the estate's Cabernet Sauvignon, named for the historic mail route, and it is built from hand-harvested estate fruit fermented in small lots and aged in 100% new French oak for roughly 20 months before bottling unfined and unfiltered at about 14.8% ABV. The 2018 vintage, a long, cool, textbook Napa year, delivers a saturated purple wine with a flamboyant nose of crème de cassis, black raspberry, violets, graphite and sweet tobacco, a full-bodied palate of plush, ultra-fine tannins and a finish that goes on for a minute. Decant an hour and serve with prime rib or a dry-aged porterhouse.
