Made in small batches from 100 percent blue Weber agave, the piñas are slow-cooked in brick ovens, fermented with water and yeast, and distilled three times in copper pot stills, then the tequila rests in oak barrels before bottling at 40% ABV, 80 proof. Reviewers describe a light gold color and a nose of herbal agave, lemon citrus, black pepper, brown sugar and creamy vanilla caramel, with a palate that keeps the blanco's agave and pepper but wraps it in brown sugar and caramel from the wood, and a soft finish that stays balanced on ice.
