Their winery, finished in 1991, was the first in the United States to put the entire winemaking process underground: 45,000 square feet of caves blasted into the mountain, complete with a subterranean waterfall and a cave held at a constant 61 degrees. This estate-grown Cabernet Sauvignon is fermented and aged entirely in those caves, where the winemaking team favors new French oak, often in half-size barrels for faster extraction, before bottling at around 14.5% alcohol. Critics and collectors consistently find intense ripe dark fruit, cigar box, graphite, and cedar on the nose, with blackberry, dark chocolate, and firm, polished tannins through a long finish.
