The mash is open-fermented, double distilled in Scottish copper pot stills in the Navy Yard's Paymaster Building, aged four to seven years in new charred oak barrels, then blended and bottled un-chill-filtered at 90 proof (45% ABV). The distillery describes notes of caramel, vanilla and dark berries and points out that the bottle is cited frequently on lists of the best craft bourbons.
