For Burning Mast, 19% of that Reserva spends an additional 11 to 19 days in barrels seasoned with red peppers, then rejoins the other 81%, bottled at 40% ABV. Expect caramelized vanilla, honeysuckle, spiced ginger, roasted almond, cinnamon, and cardamom on the nose, opening into earthy vanilla, caramel, nutmeg, and cashew before a wash of red pepper builds — cinnamon red-hots at first, then something closer to cayenne and hot paprika that Wine Enthusiast found escalating with each sip into savory jerk-spice territory.
