The Sonoma Valley Cabernet Sauvignon is drawn from the estate's red loam hillside blocks, which the winemaker credits with giving the fruit its firm foundation, and is aged in French and American oak to round out the tannins. At 14.5% ABV it opens with aromas of raspberry, cassis and baking spice, then delivers rich tannins, black cherry and coffee flavors and a well-structured finish. The winery suggests it for summer barbecue, from burgers to spare ribs, and pairs it with Hawaiian-style short ribs; it is equally at home with a weeknight steak or a hard aged cheese.
