These older casks release less tannin and allow the fruit to lead, consistent with the house style set by Martell's practice of distilling clear wines without lees in its copper stills. Cellar Master Christophe Valtaud blends Ugni Blanc eaux-de-vie from the four premier crus, Grande Champagne, Petite Champagne, Borderies and Fins Bois, each aged a minimum of four years. Martell describes a round, fruit-forward cognac with aromas of plum, blackcurrant and candied fruit, notes of liquorice and cinnamon on the palate and a smooth, lingering finish with a hint of toasted oak.
