Kitchom is then given extra time to mellow, aged for one year in steel tanks before being filled into a handmade, hand-painted glazed clay tsubo flask, so each bottle is slightly different. The producer describes it as balanced, smooth and clean with a richly aromatic long finish, best enjoyed with little mixing: neat, on the rocks or with a splash of water. Retailers note toasted coconut and banana in the aroma. It is bottled at 24% ABV in a 720ml ceramic flask. Nikaido's barley shochu is often called Japan's first national shochu brand, and Oita produces 99.6% of the country's mugi shochu.
