{"product_id":"residence-organic-gin","title":"Résidence Organic Gin","description":"\u003cp\u003eRésidence Organic Gin is distilled in the Charentes, France, by Résidence Spirits, the small organic house run by Mathieu and Tamiko Leboeuf, whose approach is rooted in agroecology and the region's Cognac-making traditions. The base is a neutral spirit from French organic wheat, and the botanical bill is led by juniper, at least half the recipe, with a growing share of French-grown berries, plus bergamot from Corsica, of which only the dried peel is used, harvested and dried on site. Elderberry and elderflower follow, and four further organic botanicals are kept secret. Rather than macerating everything together London Dry style, each botanical is distilled separately in small copper pot stills using the slow Charentais method, with the juniper distillate run at 75% and the bergamot at 81%, and the finished gin is bottled unfiltered at 43% ABV to keep its natural aromatics, which can show a light haze when chilled. The producer describes a fruity, round, spicy nose of resinous juniper, orange blossom, bergamot and angelica with nutmeg, clove and Timut pepper, and a silky, warm palate of candied orange, citrus zest and a hint of cinnamon.
