Knights Valley is Sonoma's warmest Cabernet appellation, tucked between the Mayacamas and the base of Mount St. Helena, and the wine is 100% Cabernet Sauvignon from 100% Knights Valley fruit. Winemaker Olivia Wright aged the 2023 for 18 months in 100% French oak, 50% new, and bottled it at 14.0% ABV in 750ml. The cool 2023 season and its very late harvest produced extended hang time and ripe, balanced fruit. The winery notes aromas of crushed blackberries, spicy dark plum, dusty cocoa powder, cassis and wild raspberry, followed by layers of spice, red fruit and chocolate with rich, velvety tannins and a long finish, with cellaring potential of three to five years. It pairs beautifully with braised short ribs, lamb shanks or mushroom ravioli.
