The portrait on the label is Salvador Rosales Briseño, the founder of Cascahuín, whose grandson Salvador Rosales Torres runs the stills today. The tequila underneath is made the old way, without shortcuts: estate blue Weber agave slow-cooked in a wood-fired brick oven, crushed on a roller mill, fermented in open brick tanks with the distillery's own house yeast, and distilled in stainless stills with copper coils so every drop touches copper. The result carries Cascahuín's signature: rich cooked agave, a mineral, earthy backbone, and just enough oak from the short rest to add vanilla and soften the edges without covering the agave.
