The Rutherford Cabernet Sauvignon is 100% Cabernet from the Rutherford bench, the heart of Napa's Cabernet country, where gravelly, well-drained soils produce the famous \"Rutherford dust\" tannin. Winemaker Maayan Koschitzky hand-harvests and hand-sorts the fruit, runs an extended cold soak and a long maceration, then ages the wine 18 months in 100% new French oak without racking until bottling. The 2019 finishes at 14.8% ABV in 750ml and shows a rich, dense mid-palate leading to cocoa-like tannins and dark chocolate on the finish. Wine Enthusiast and James Suckling each rated it 93 points, and Wine Spectator gave it 92. Pair it with a bone-in ribeye, braised oxtail or aged Gouda.
