The process is old-school throughout: agave roasted in an earthen pit, fermented five to seven days in cypress tanks with wild airborne yeast, and double distilled in small clay pots. An ensamble of Mexicano and espadín, roasted and distilled together. Espadín brings the familiar roasted-agave backbone and a touch of smoke; Mexicano, a slower-growing and far less common agave, brings sweetness, herbs, and fruit. The pairing is a good way into Tepanal's clay-pot style — recognizable enough for an espadín drinker, with enough going on to reward a slow pour.
