The base follows the house method: estate-grown Blue Weber agave matured six to eight years, roasted at least 26 hours in brick ovens with culinary steam, crushed on a roller mill, open-fermented five to eight days in stainless steel with proprietary and Caribbean rum yeasts and deep well water, and distilled twice in copper pot stills. To make the joven, a small percentage of reposado aged three to four months is folded into the blanco and the blend is rested in tank before bottling at 40% ABV in a one-liter bottle, with no additives, so the pale straw color comes from the reposado share alone. Skurnik describes playful notes of black pepper, sweet potato, canela, soft soil, dry hay bales, burnt sugar and a hint of vanilla, a blanco's brightness with a whisper of barrel.
