Each release names the farmer who made it, the village, the cane, and the still, and nothing is added after distillation. Caña Criolla comes from Pedro Bautista in Oaxaca, a second-generation aguardientero who works with heritage cane. The Criolla variety is pressed fresh and fermented for more than twenty days in closed 1,100-liter tanks, then distilled on a twenty-year-old four-plate copper column and bottled at 51.9% ABV. The long ferment gives it real backbone, but the character is clean and mineral, almost blanco-tequila-like in its clarity, with green cane, white pepper, and a dry stony finish.
