Each release names the farmer who made it, the village, the cane, and the still, and nothing is added after distillation. Caña Cristalina is from Marcos López of Cosautlán de Carvajal, Veracruz, a farmer who grows cane, coffee, and limes and learned to distill from his father and grandfather. It's made from the fresh-pressed juice of the Cristalina cane variety, fermented with native yeast and distilled on a wood-fired four-plate copper column, bottled at 49.4% ABV. The quietest of the range: mineral-driven, clean, and grassy, with a soft cane sweetness and a dry, stony finish.
