Seven distinct soil types, from gravel and volcanic slopes to sandy river benches, are farmed, picked and fermented separately. Seysses applies Burgundian instincts to Cabernet: whole-cluster fermentation with a submerged cap, a traditional pied de cuve starter and aging in vessels ranging from barrique to large foudre, a deliberate break from Napa convention. The 2022 debut was released in early 2025 by allocation.
