Dixon Dedman started working at the Beaumont Inn at age eight — the oldest continuously family-operated inn in the United States, in Harrodsburg, Kentucky, a James Beard America's Classic — and credits its test kitchen for building his palate. The Innkeeper's Blend, the second release in 2XO's Icon Series, honors that. Dedman is the blender who resurrected his great-great-grandfather's Kentucky Owl in 2014 and made it a cult; after handing the inn to his cousins in late 2022, he launched 2XO — "Two Times Oak" — around one idea: every expression gets a second round of oak. The Innkeeper's Blend uses the same lot of barrels as the debut Phoenix Blend but, per Drinkhacker, achieves a depth of flavor the inaugural release didn't quite capture — the site rated it an A, and it took Gold at the 2023 San Francisco World Spirits Competition and Double Platinum at the 2023 ASCOT Awards. Two proprietary Kentucky mash bills, a high-rye 35% and a moderate-rye 18%, with the high-rye double-barreled into new charred oak at #3 and #4 char before blending; bottled at 104 proof. Expect a sticky caramel sweetness — the note Drinkhacker's readers singled out — over brown sugar, vanilla, and toasted oak, opening into a rich palate of butterscotch, baking spice, and rye pepper with the char adding depth, finishing long and warm.
