Ozeki was founded in 1711 in Imazu, in the Nada district of Hyogo Prefecture, and is one of Japan's oldest and largest sake brewers. In 1979 it became the first Japanese brewery to open a sake brewery in the United States, in Hollister, California, bringing fresh, affordable, authentic sake to American tables just as sushi was taking off.
