Description: Single blended rum distilled by South Pacific Distilleries in Lautoka, Fiji, and bottled by Holmes Cay, this unique spirit is a blend of unaged pot still rum and aged column still rums, distilled from 100% molasses. While it carries no age statement, the column-distilled rum is aged tropically for 2 years in Fiji. It features a fruity, ester-forward nose with aromas of banana, burnt sugar, and oatmeal raisin cookies, leading to a palate of clove, honey, and treacle, with toasted Tellicherry peppercorn and papaya on the finish. This rum contains no sugar, coloring, or other additives, and is non-chill filtered with an ABV of 46%. Selected in collaboration with the Rumcast podcast and master blenders at E&A Scheer, Holmes Cay’s first single origin blend hails from the renowned South Pacific Distilleries, the last remaining distillery in Fiji. Its composition and lack of additives, along with its youthful character, highlight more terroir and cane influence than barrel influence.
