Alto Canto means "highland song," and the claim behind it is real: it's distilled at NOM 1636 in the Sierra del Tigre mountains of Jalisco at 9,000 feet — the highest-altitude tequila distillery in Mexico, where thinner air lowers the boiling point and changes how the spirit distills. Founded by sommelier Daday Suarez with Master Distiller Juan Reyes, formerly of Patrón, it's certified organic and additive-free: agave cooked 72 hours in brick ovens, crushed by tahona, wild-fermented roughly 80 hours with fibers in open wooden tanks using only ambient yeast — plus a second malolactic fermentation, a winemaking technique almost nobody in tequila uses. The reposado then rests four months in new American oak (rather than the usual ex-bourbon), housed in an adobe cellar. Bottled at 40% ABV, individually numbered. Wine Enthusiast's blind tasting found flinty, floral aromas with lychee, toasted coconut, and guava; other tasters describe tangerine, candied orange peel, salted caramel, crème brûlée, and nutmeg — dessert in an autumn orchard. Honest note: reviews genuinely split, with one critic finding a sour edge and a short finish across the line. A distinctive, ambitious pour either way — excellent in a Tequila Old Fashioned.
