Tres is 123 Organic's añejo — eighteen months in white oak — and Distiller's tasters found big vanilla and oak, dark Baker's chocolate, and sweet ripe peach. 123 Organic is the tequila of David Ravandi, who applied winemaking ideas of terroir and natural fermentation to certified-organic agave two decades before additive-free became a movement; the agave is grown organically and biodynamically in the red Tierra Roja soil of Amatitán in the Tequila Valley and made at NOM 1480, Tequila Las Américas, a certified-organic distillery, with hand-blown recycled-glass bottles and soy-ink labels — Tres carries three roosters, tototl, greeting the dawn. Añejo is the organic blanco aged eighteen months in white oak barrels, bottled at 40% ABV, USDA and EU certified organic and additive-free. The house describes it as having a more prominent oak presence, with tannin and cedar. Expect a nose of vanilla, toasted oak, cooked agave, and dried fruit with a cedar edge, opening into a rich, rounded palate of caramel, dark chocolate, ripe stone fruit, cinnamon, and gentle tannin with a long, warm, oaky finish — still recognizably agave under the wood. Honest note: it's a valley añejo with real oak on it, made for the whiskey or Cognac drinker crossing over, and sits between Dos and the Diablito extra añejo that collectors chase.
