4 Copas Añejo was seven years in the making — the special creation of Sebastián Meléndrez and his team — and Alex Garcia found it opened up more than a mob boss facing twenty-five to life. 4 Copas was the world's first certified-organic tequila — the name means four cups, from the old Mexican verse we shall drink four cups — born in Amatitán, the cradle of tequila, and made at NOM 1480, Tequila Las Américas, the certified-organic distillery in the Tequila Valley; the brand supports the Sea Turtle Restoration Project. Añejo is the organic blanco aged seventeen months in charred American white oak, bottled at 40% ABV with no additives; it won Bronze at the 2006 San Francisco World Spirits Competition. The house notes a deep amber pour with golden and orange hues, burned vanilla, tobacco, nuts, coffee, and maple from the barrel, sweet cooked agave, dried peach, apricot, and cherry, and rose petals — harmonious and elegant. Alex Garcia worried the añejo might drown in oak and found instead the vanilla of the reposado with more depth. Honest note: seventeen months is a full añejo term on a valley tequila, and it reads richer and more oak-driven than the reposado — for the sipper crossing from bourbon or Cognac, not the Margarita.
