Don Fulano Añejo is thirty months in French oak from the Fonseca family — the highland-agave, valley-distilled house behind Fuenteseca and Cierto, additive-free. Don Fulano is the Fonseca family's own brand: Enrique Fonseca, a fourth-generation agavero and one of the largest independent growers in Jalisco, grows the agave in the Atotonilco highlands and distills it at La Tequileña, NOM 1146, in the town of Tequila, with his nephew Sergio Mendoza — the same hands behind Cierto and Jake Lustig's ArteNOM 1146. The Añejo is 100% estate-grown highland blue Weber agave harvested fully mature, slow-cooked in low-pressure ovens, distilled in Fonseca's combination of pot and column stills, aged thirty months in French Limousin oak, and bottled at 40% ABV — verified additive-free. French oak gives dried fruit, spice, and tannin rather than the vanilla-caramel of bourbon wood: expect a nose of cooked agave, dried apricot, orange peel, cedar, and baking spice, opening into an elegant, layered palate of caramel, fig, cinnamon, and soft tannin with the highland agave's floral lift and a long, refined finish.
