Fonseca is a fourth-generation agavero, one of the largest independent growers in Jalisco, and the distiller at La Tequileña, NOM 1146, in the town of Tequila; he began laying down extra añejo in the early 2000s, moving barrels between altitudes and climates to steer the aging, and Fuenteseca — additive-free, estate-bottled — is the result. The 7 Year is 100% highland and valley blue Weber agave from Fonseca's estates, distilled in his combination of pot and column stills, aged seven years in a mix of French and American oak, and bottled at around 42% ABV; check your bottle for the cosecha.
