The name comes from the stylish box a Belgian chocolatier's wife invented in 1915 to present fine chocolates. Like every Ballotin, it starts with 100% whiskey and no neutral spirit — a traditional bourbon mash of at least 51% corn with wheat and barley, aged in used oak barrels — but the cream expressions blend that whiskey with real cream, which brings the proof down to 34 (17% ABV), in the same territory as an Irish cream. Expect a nose of milk chocolate and maraschino cherry with a whiskey warmth underneath, opening into a rich, velvety palate where the cream carries chocolate and cherry together like the candy, the whiskey adding just enough backbone to keep it from being pure dessert, finishing smooth and sweet.
