Born in Cuba and known universally as "Don Pancho," Fernandez spent nearly 40 years as the head of research and development for Havana Club before refusing to compromise his standards when new ownership sought to change the rum — and relocating to Panama where he discovered a neglected distillery in the Herrera region that he rebuilt into Las Cabras Distillery, one of the most revered rum facilities in the world. Las Cabras operates the last known functioning copper column still of its kind in the world — the sister still to the legendary Pennsylvania Michters still.
