Heirloom American Alchermes Liqueur
Alchermes is one of the stranger, older stories in the liqueur world: a spiced potion that first traveled from the Middle East into Europe back in the 8th century, prized for centuries for its supposed healing properties. Its signature scarlet-ruby color has always come from cochineal, the same crushed insect used in carmine dye, and historic recipes even included crushed pearls, silk, and gold flakes. Heirloom, the Minneapolis liqueur house born out of Bittercube's bitters program, built its American Alchermes around warm cinnamon and clove, softened with rose water and vanilla bean — and as far as they know, it's the only alchermes currently made in the U.S. The nose is warm, earthy, and gently floral, layering cinnamon and baking spice with a whisper of rose. On the palate, cardamom, coriander, vanilla, and candied citrus peel build over that same rose thread, finishing smooth, lingering, and warmly spiced. Alchermes has a long history in Italian baking too — a splash brightens up Zuppa Inglese or strawberry shortcake — but at the bar, it shines in a Negroni, an Alchermes Spritz, or as a spiced modifier in a sour or fizz.
