La Diablada Pisco
La Diablada is Peru's most celebrated super-premium pisco — and one of the most compelling arguments for why this ancient Andean spirit deserves a permanent place behind every serious bar. Named after La Diablada, the Andean spiritual dance that reenacts the legendary battle between angels and demons, it was created by Peruvian sisters Melanie and Lizzie Asher with the help of their 90-year-old grandmother's blending expertise and a co-op of women farmers supplying the grapes. An acholado-style pisco — a blend of both aromatic and non-aromatic varieties — La Diablada combines four grape varieties grown in Peru's coastal valleys: the earthy, non-aromatic Quebranta alongside the intensely floral Moscatel, Italia, and Torontel. Each variety is distilled separately in copper pot stills from the first pressing of fresh grape must, then rested for two years — the alcohol strength naturally falling to 40% without any water addition, as Peruvian pisco regulations require. Each bottle contains approximately 18 pounds of grapes. The nose is wonderfully layered with honeysuckle, jasmine, green apples, fresh herbs, and rose petals, while the palate brings violet, fresh grapes, peach, plum, and blueberry with spicy nutmeg, black pepper, and a herbaceous basil note — finishing dry, floral, and long.
