The Blanco is 100% seven-to-ten-year blue Weber agave from a single farm in Los Altos, cooked forty-eight hours in clay ovens, roller-milled, fermented seventy-two hours in open-air stainless with proprietary and native yeast, double-distilled in stainless pots with highland spring water, aerated, and bottled unaged at 40% ABV.
