This Caol Ila, from Islay's largest distillery, spent twelve years in first-fill bourbon casks before a finish in ex-red wine barrels from Israel's Flam Winery. Bottled at 92 proof, non-chill-filtered and naturally colored, it balances sweet and smoky: ashy, flinty peat with honey, caramelized apple and crystallized ginger on the nose, then oatcake maltiness, seaweed minerality, golden syrup, milk chocolate and white peach, finishing long with drying smoke.
